Executive Chef - Daniel Lawrence

One of the most exciting appointments at Caves Beachside is Daniel Lawrence as Executive Chef. With over 20 years experience in the industry, Daniel understands the importance of fresh produce, fine food and customer satisfaction and retention.

“It has been a whirlwind opening, and we have served over 5000 meals to our new clientele in just over 14 days. Our guests have certainly enjoyed the many different styles of dining we have on offer here at the resort.”

Our a la carte restaurant boasts an array of fresh seafood, a display which has been designed by our personally appointed fish monger.

Our bistro offers over 30 different meal choices and is open 7 days a week for lunch and dinner.

Our café is also open from 10am-10pm daily, offering a selection of European style pastries, great coffee and light snacks.

Daniel has worked in many renowned venues in the Newcastle and Hunter Region including Squids Ink, Bayviews and most recently Executive Chef at Awaba House.

Caramelised Fennel and Blue cheese risotto topped with a confit of tomatoes and roasted parsnips

Oven Roasted Rack of Lamb filled w/ spinach, sundried tomato and pinenut stuffing finished w/ honey mustard jus

“C” Signature Dish
350g Chargrilled Beef Tenderloin Fillet topped with 500g fresh lobster, finished with a thermidor style mornay
